E – Eggs

Down at the allotments there is a no live stock rule, I had thought prior to joining that there would be a few bee hives a couple of ‘chooks’ scratching around, maybe its a thought of an idyllic bygone time.

I keep a few bantams at Meadowside Barn to delight the guests, they give the front garden an extra dimension, round fluffy feathered football sized ‘Pekin Bantams’ have a real wow factor…

These bantams produce tiny half sized eggs, half a dozen make a lovely omelette for one!

I often use two for the guests breakfast (full Norfolk); the guests are usually amazed to be eating eggs so fresh and with yolks of a colour rarely seen in shop purchased varieties.

In the lanes around our village are many egg stalls, everybody can have fresh eggs in season (until I kept the bantams I had no idea they don’t lay after Autumn until Spring) at £1 a half dozen great value too. Buy them by the road side, pop your coin in an honesty box, you’ll have the freshest eggs your likely to find.

Where would we be without eggs? an essential ingredient of so many dishes savoury or sweet. I predominantly use mine for the guests breakfast but handily enough a short stroll along the lane I can pick up duck or even goose eggs; great for baking those cakes for the afternoon tea for arriving guests!

  1. I don’t know enough people who have spare eggs where I live these days so my eggs come from the supermarket but I pour over the details on the boxes before I choose. I love sketching chickens, just putting that out there.
